Doug/Logan

Isn't he precious. This is who we really really really want!!! We have been wanting to rescue a Golden Retriever for a long while now, you have probably heard us talk about it. The procedure got a little delayed with us moving to another country and such.

Mason's new friend is 4 years old, and in Austin right not just waiting to meet his new parents! You are able to read more about him here: http://grr-tx.com/adoption/adopt_to/bailey_10-023/bailey.htm.

The game plan is to get him when I come home at the end of May. This is all very tentative still, depending on if I am able to get a job before then. My parents are helping us out, and talking to the adoption/rescue organization for us. Did I mention we really really want him!!

We need help with names. Doug or Logan are the ideas we've got so far. Any thoughts?

What's for breakfast?

I am always so boring in my breakfast menu planning, its always just cereal/oatmeal, fruit or eggs and bacon during the weeks and on the weekends we branch out and eat pancakes or breakfast tacos. I never can think of anything creative and delicious. I always come across appetizing breakfast casserole recipe ideas but casseroles are too difficult and long of a process right when you wake up. I came across an excellent recipe the other day, and we had it for breakfast this morning. It was very yum yum and super easy. It will be going on a lot more of our future breakfast menus, so I just had to share the recipe for you to try. You prepare the ingredients the night before (which only takes 5 minutes) and then in the morning all you have to do is pop it in the oven. We topped it off with some chopped pecans. Happy eating!

3 cups half & half
2 eggs, beaten
3 TBS butter, melted
1/2 cup brown sugar
1 TSP vanilla
1/4 TSP salt
2 cups uncooked old-fashioned oats
1 TSP ground cinnamon
1/2 cup sweetened dried cranberries or cherries

Combine all oatmeal ingredients except oats, cinnamon and cranberries in large bowl. Add oats and cinnamon; stir until combined. Pour into greased 2-quart casserole; cover. Refrigerate 8 hours or overnight.

Heat oven to 350°F. Add cranberries; stir. Bake, uncovered, for 40 to 50 minutes, stirring twice, until thick and creamy. Remove from oven; stir before serving.
